Air Fryer Hash Brown Egg Bites

These egg bites are a hearty, savory, and portable breakfast option, combining crispy hash browns with fluffy eggs, cheese, and your favorite mix-ins. Cooking them in the air fryer gives a golden exterior while keeping the eggs tender and custardy inside. This recipe makes 6–8 egg bites, depending on your molds.


Ingredients:

For the Egg Bites:

  • 2 cups frozen hash browns, thawed and drained
  • 6 large eggs
  • 1/4 cup milk or cream
  • 1/2 cup shredded cheese (cheddar, mozzarella, or Havarti)
  • 1/4 cup cooked bacon, sausage, or ham, chopped (optional)
  • 1/4 cup diced bell peppers, onions, or spinach (optional)
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon smoked paprika (optional)
  • Salt and black pepper, to taste
  • Cooking spray or oil for greasing molds

Instructions:

1. Prepare the Egg Mixture

  1. In a medium bowl, whisk together eggs, milk, garlic powder, smoked paprika, salt, and pepper until smooth.
  2. Stir in shredded cheese and any optional mix-ins like cooked meat or vegetables.

2. Prepare the Hash Browns

  1. Thaw and drain the hash browns to remove excess moisture.
  2. Optionally, lightly season the hash browns with salt and pepper.

3. Assemble the Egg Bites

  1. Preheat the air fryer to 350°F (175°C) for 3–5 minutes.
  2. Lightly grease silicone muffin cups or an air fryer-safe pan with cooking spray.
