Keto Cauliflower Pizza Bites are a low-carb, bite-sized alternative to traditional pizza, made with a cauliflower-based crust and topped with classic pizza flavors. These bites deliver the taste and satisfaction of pizza while remaining keto-friendly, gluten-free, and suitable for meal prep, snacks, or appetizers. They are crispy on the outside, soft on the inside, and packed with cheesy, savory flavor.


Ingredients (Makes 18–24 bites)

Cauliflower Base

  • 1 medium head cauliflower (about 4 cups riced cauliflower)
  • Water for steaming

Dairy

  • 1½ cups shredded mozzarella cheese
  • ¼ cup grated Parmesan cheese
  • 2 oz cream cheese, softened

Binders

  • 2 large eggs
  • ½ cup almond flour

Seasonings (Crust)

  • 1 teaspoon Italian seasoning
  • ½ teaspoon garlic powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Pizza Toppings

  • ¼ cup sugar-free pizza sauce (low-carb, no added sugar)
  • ½ cup shredded mozzarella (for topping)
  • ¼ cup mini pepperoni or chopped sugar-free pepperoni
  • 2 tablespoons black olives, sliced (optional)
  • 2 tablespoons bell peppers, finely diced (optional)

Instructions

Step 1: Prepare the Cauliflower

Cut the cauliflower into florets and pulse them in a food processor until they resemble rice. Steam the riced cauliflower for 5–6 minutes until tender. Allow it to cool slightly, then place it in a clean kitchen towel and squeeze out as much moisture as possible. This step is essential to prevent soggy bites.

Step 2: Preheat the Oven

Preheat your oven to 400°F (200°C). Generously grease a mini muffin tin or standard muffin tin with butter or olive oil.

Step 3: Make the Cauliflower Dough

In a large bowl, combine the drained cauliflower, mozzarella cheese, Parmesan cheese, and cream cheese. Mix well. Add the eggs, almond flour, Italian seasoning, garlic powder, salt, and black pepper. Stir until a thick, sticky dough forms.

Step 4: Form the Pizza Bites

Scoop the cauliflower mixture into the greased muffin tin, filling each cup about ¾ full. Press the mixture firmly to form a small crust base.

Step 5: Bake the Crust

Bake the cauliflower bases for 15–18 minutes until set and lightly golden. Remove from the oven.

Step 6: Add Toppings

Spoon a small amount of sugar-free pizza sauce onto each bite. Sprinkle with shredded mozzarella and add pepperoni and optional toppings.

Step 7: Final Bake

Return the muffin tin to the oven and bake for an additional 8–10 minutes, or until the cheese is melted and bubbly.

Step 8: Cool and Remove

Let the pizza bites cool for 5 minutes before carefully removing them from the tin. This helps them firm up and hold their shape.
