Salmon Patties

Salmon Patties, also known as salmon cakes or salmon fritters, are a classic and versatile dish made from flaked salmon mixed with seasonings, binders, and aromatics, then pan-fried until golden and crisp. They are economical, easy to prepare, and suitable for lunch, dinner, or as an appetizer. Salmon patties can be made using fresh, cooked salmon or canned salmon, making them a convenient option for everyday cooking.


Ingredients

For the Salmon Mixture

  • 2 cups cooked salmon, flaked (or 2 cans, about 400 grams, drained and flaked)
  • 1 small onion, finely chopped
  • 2 tablespoons fresh parsley or dill, finely chopped
  • 1 clove garlic, minced
  • 1 teaspoon lemon juice
  • 1 teaspoon Dijon mustard (optional)
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon paprika

For Binding

  • 1 large egg
  • ½ cup breadcrumbs or crushed crackers
  • 2 tablespoons mayonnaise or plain yogurt

For Cooking

  • 3–4 tablespoons oil (vegetable, olive, or canola oil)

Preparation Steps

Step 1: Prepare the Salmon

  1. If using canned salmon, drain it well and remove any skin and large bones if present.
  2. Flake the salmon using a fork and place it in a large mixing bowl.
  3. If using freshly cooked salmon, allow it to cool slightly before flaking.

Step 2: Make the Patty Mixture

  1. Add chopped onion, parsley or dill, garlic, lemon juice, and Dijon mustard to the salmon.
  2. Season with salt, black pepper, and paprika.
  3. Add the egg, breadcrumbs, and mayonnaise or yogurt.
  4. Gently mix until all ingredients are well combined.
  5. The mixture should be moist but firm enough to hold its shape. If too wet, add more breadcrumbs; if too dry, add a small amount of mayonnaise or egg.

Step 3: Shape the Patties

  1. Divide the mixture into equal portions, depending on desired size.
  2. Shape each portion into a round, flat patty about 1.5 to 2 centimeters thick.
  3. Place the patties on a plate and refrigerate for 15–20 minutes. This helps them firm up and prevents breaking during cooking.

Step 4: Pan-Fry the Salmon Patties

  1. Heat oil in a large skillet over medium heat.
  2. Once the oil is hot, carefully place the patties in the pan, leaving space between them.
  3. Cook for 3–4 minutes on each side, or until golden brown and crispy.
  4. Flip gently to avoid breaking the patties.
  5. Remove from the pan and place on paper towels to drain excess oil.

Serving Suggestions

  • Serve hot with tartar sauce, lemon wedges, or garlic aioli.
  • Pair with mashed potatoes, rice, or a fresh green salad.
  • Use the patties in burgers or sandwiches with lettuce and sauce.

  • For extra crispiness, lightly coat the patties in breadcrumbs before frying.
  • Add chopped bell peppers or celery for extra texture.
  • For a healthier option, shallow bake the patties in the oven at 200°C (400°F) for 15–18 minutes, flipping halfway.
  • Use canned pink salmon for a budget-friendly option or fresh salmon for a richer flavor.
  • Avoid overmixing, as it can make the patties dense.

Storage and Reheating

  • Store cooked patties in an airtight container in the refrigerator for up to 3 days.
  • Reheat in a skillet over low heat or in the oven to maintain crispness.
  • Patties can also be frozen before or after cooking and reheated as needed.
