Air fryer Chicken Skewers

1. Ingredients Required

For the chicken and marinade:

  • 500 grams boneless chicken breast or boneless chicken thighs
  • 2 tablespoons plain yogurt
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice or vinegar
  • 1 teaspoon garlic paste
  • 1 teaspoon ginger paste
  • 1 teaspoon paprika or red chili powder
  • 1 teaspoon black pepper powder
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • 1 teaspoon dried oregano or mixed herbs
  • Salt to taste

Optional vegetables:

  • 1 medium onion, cut into chunks
  • 1 bell pepper, cut into square pieces
  • 1 zucchini or mushrooms, cut into bite-sized pieces

Other items:

  • Wooden or metal skewers

2. Preparing the Chicken

  • Wash the chicken thoroughly and pat it dry using a kitchen towel.
  • Cut the chicken into equal-sized cubes, about one to one and a half inches.
  • Uniform size helps the chicken cook evenly in the air fryer.
  • If using wooden skewers, soak them in water for 20 to 30 minutes to prevent burning.

3. Making the Marinade

  • Take a large mixing bowl.
  • Add yogurt, olive oil, lemon juice, garlic paste, and ginger paste.
  • Add all the spices including chili powder, black pepper, cumin powder, coriander powder, dried herbs, and salt.
  • Mix everything well until a smooth and thick marinade is formed.

4. Marinating the Chicken

  • Add the chicken pieces to the prepared marinade.
  • Mix well so every piece is evenly coated.
  • Cover the bowl and let the chicken marinate for at least 30 minutes.
  • For best flavor, marinate for 2 to 4 hours in the refrigerator.
  • Overnight marination gives the most tender and flavorful results.

5. Assembling the Skewers

  • Take the marinated chicken out of the refrigerator.
  • Thread chicken pieces onto the skewers.
  • If using vegetables, alternate chicken pieces with onion, bell pepper, or other vegetables.
  • Leave a small gap between each piece for proper air circulation.
  • Do not overcrowd the skewers.

6. Preheating the Air Fryer

  • Preheat the air fryer to 180 degrees Celsius.
  • Allow it to preheat for about 5 minutes.
  • Preheating helps achieve even cooking and better browning.

7. Cooking the Chicken Skewers

  • Lightly grease the air fryer basket with oil or cooking spray.
  • Place the skewers in a single layer inside the basket.
  • Do not overlap or stack the skewers.
  • Air fry at 180 degrees Celsius for 12 to 15 minutes.
  • Turn the skewers halfway through cooking for even browning.

8. Checking for Doneness

  • Cut one piece of chicken to check if it is fully cooked.
  • The chicken should be white inside with no pink color.
  • Juices should run clear.
  • Internal temperature should reach at least 75 degrees Celsius.

9. Optional Glazing Step

  • During the last 2 to 3 minutes of cooking, brush the skewers with sauce if desired.
  • Barbecue sauce, honey mustard, or garlic butter work well.
  • Return the skewers to the air fryer until lightly caramelized.

10. Resting and Serving

  • Remove the skewers from the air fryer.
  • Let them rest for 3 to 5 minutes before serving.
  • This helps keep the chicken juicy.
  • Serve hot with salad, flatbread, or rice.
  • Pair with yogurt dip, mint chutney, or garlic sauce.

11. Storage and Reheating

  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • Reheat in the air fryer at 160 degrees Celsius for 4 to 5 minutes.
  • Avoid reheating in the microwave to prevent drying.

  • Chicken thighs give juicier results than chicken breast.
  • Adjust spices according to taste preference.
  • Add smoked paprika for a smoky flavor.
  • For a Mediterranean taste, add lemon zest and olive oil before serving.
  • For an Asian-style version, use soy sauce, ginger, garlic, and a little honey instead of yogurt.
