Introduction

Cottage Cheese Sticks are a delicious, crispy-on-the-outside and soft-on-the-inside snack that makes an excellent appetizer, tea-time treat, or party food. These sticks combine the mild, creamy taste of cottage cheese with aromatic herbs, spices, and a crunchy outer coating. They can be deep-fried, shallow-fried, baked, or air-fried, making them a versatile option for different cooking preferences.


Ingredients

For the Cottage Cheese Mixture

  • 250 grams cottage cheese (paneer), grated or crumbled
  • 2 tablespoons cornflour
  • 2 tablespoons all-purpose flour
  • 1 tablespoon breadcrumbs
  • 1 green chili, finely chopped (optional)
  • ½ teaspoon black pepper powder
  • ½ teaspoon red chili powder
  • ½ teaspoon garlic powder or 1 teaspoon minced garlic
  • ½ teaspoon dried oregano or mixed herbs
  • Salt to taste
  • 1 tablespoon chopped fresh coriander or parsley
  • 1 teaspoon lemon juice

For Coating

  • ½ cup all-purpose flour
  • ¼ teaspoon salt
  • Water as needed to make a smooth slurry
  • 1 cup breadcrumbs (preferably panko for extra crunch)

For Frying

  • Oil for deep or shallow frying

Preparation

  1. Prepare the Cottage Cheese Mixture
    Place the grated or crumbled cottage cheese in a large mixing bowl. Add cornflour, all-purpose flour, breadcrumbs, green chili, black pepper, red chili powder, garlic powder, dried herbs, salt, chopped coriander, and lemon juice. Mix thoroughly using clean hands or a spoon until a soft yet firm dough forms. The mixture should hold its shape without being sticky. If it feels too soft, add a little more breadcrumbs.
  2. Shape the Sticks
    Divide the mixture into equal portions. Roll each portion between your palms and shape it into finger-length sticks, approximately 3–4 inches long. Place the shaped sticks on a plate and refrigerate for 15–20 minutes. Chilling helps them firm up and prevents breaking during frying.

Coating Instructions

  1. Prepare the Slurry
    In a bowl, mix all-purpose flour and salt. Gradually add water to form a smooth, lump-free slurry with a medium consistency.
  2. Coat the Sticks
    Take each chilled cottage cheese stick, dip it into the flour slurry ensuring it is evenly coated, then roll it in breadcrumbs. Press lightly so the breadcrumbs stick well. For extra crispiness, repeat the slurry and breadcrumb coating once more.

Cooking Instructions

Deep-Frying Method

  1. Heat oil in a deep pan over medium heat.
  2. Once the oil is hot but not smoking, gently slide the coated sticks into the oil.
  3. Fry in small batches, turning occasionally, until the sticks are golden brown and crisp on all sides.
  4. Remove using a slotted spoon and drain excess oil on paper towels.

Shallow-Frying Method

  1. Heat a few tablespoons of oil in a wide pan over medium heat.
  2. Place the sticks in the pan, leaving space between them.
  3. Turn carefully to ensure even browning on all sides.
  4. Cook until golden and crisp, then remove and drain excess oil.

Baking or Air-Frying Option

  • Preheat the oven or air fryer to 180°C (350°F).
  • Arrange the sticks on a lined baking tray or air fryer basket.
  • Lightly brush or spray with oil.
  • Bake or air-fry for 15–20 minutes, turning halfway, until crisp and golden.

Serving Suggestions

Serve Cottage Cheese Sticks hot with tomato ketchup, chili sauce, garlic mayo, or mint chutney. They pair well with tea, coffee, or as a starter before a main course.


Tips and Variations

  • Adding grated mozzarella or cheddar to the cottage cheese mixture creates a gooey center.
  • For a healthier version, skip deep-frying and use the baking or air-frying method.
  • You can add finely chopped vegetables such as bell peppers or onions, but ensure excess moisture is removed.
  • Season breadcrumbs with herbs or paprika for extra flavor.

Storage

Uncooked, coated sticks can be stored in the freezer for up to 1 month. Fry or bake them directly from frozen, adding a few extra minutes to the cooking time. Cooked sticks are best consumed fresh but can be refrigerated for up to 2 days and reheated in an oven or air fryer.
