Preparation Method

Step 1: Marinate the Chicken

  1. In a bowl, combine Greek yogurt, minced garlic, lemon juice, olive oil, oregano, paprika, salt, and black pepper.
  2. Add the chicken and coat thoroughly.
  3. Cover and refrigerate for at least 30 minutes, or up to 2 hours for deeper flavor.

Step 2: Make the Yogurt Flatbreads

  1. In a bowl, mix Greek yogurt, flour, and a pinch of salt to form a soft dough.
  2. Knead lightly for 1–2 minutes until smooth.
  3. Divide into 4 equal portions and roll each into a flat circle, about ½ cm thick.
  4. Heat a non-stick frying pan or griddle over medium heat and brush lightly with olive oil.
  5. Cook each flatbread for 2–3 minutes per side until golden brown spots appear. Keep warm.

Step 3: Prepare the Tzatziki

  1. In a small bowl, combine Greek yogurt, grated cucumber, minced garlic, lemon juice, olive oil, chopped dill, salt, and black pepper.
  2. Mix well and refrigerate until ready to serve.

Step 4: Cook the Chicken

  1. Heat a grill, griddle, or frying pan over medium-high heat.
  2. Cook the marinated chicken for 5–7 minutes per side, depending on thickness, until fully cooked (internal temperature 75°C / 165°F) and golden brown.
  3. Let the chicken rest for 2–3 minutes before slicing.

Step 5: Serve

  1. Slice the chicken and serve with warm yogurt flatbreads.
  2. Spoon tzatziki over the chicken or serve on the side.
  3. Add optional cherry tomatoes, red onion, and mixed greens for a fresh finish.
  4. Garnish with extra parsley or mint.

Tips and Variations

  • For extra flavor, grill the flatbreads over an open flame for slight char marks.
  • Swap oregano for thyme or rosemary for a different herb profile.
  • Add roasted peppers or olives to the flatbreads for a Mediterranean twist.
  • Tzatziki can be made a day in advance to allow flavors to develop.
  • Serve as a wrap by folding flatbreads around chicken, tzatziki, and vegetables.
