Chicken egg-fried rice is a classic high-protein, one-pan meal that combines tender chicken, fluffy rice, and softly scrambled eggs with aromatic seasonings and vegetables. This dish is quick to prepare yet deeply satisfying, making it ideal for lunch, dinner, or meal prep. When prepared correctly, the rice remains separate and light, the chicken stays juicy, and the eggs coat the grains to create rich flavor without heaviness.

  • Eggs – 3 large

  • Spring onions – 3 tablespoons, chopped (whites and greens separated)
  • Carrot – 1 medium, finely diced
  • Green peas – ½ cup
  • Capsicum – ½ cup, finely chopped
  • Cooking oil – 2 tablespoons (neutral oil or sesame oil)

Seasonings and Sauces

  • Soy sauce – 2 tablespoons
  • Oyster sauce – 1 tablespoon (optional)
  • White pepper or black pepper – ½ teaspoon
  • Salt – to taste
  • Sesame oil – 1 teaspoon (for finishing)

Preparation Method

Step 1: Prepare the Ingredients

  1. Ensure the rice is fully cooled and free of clumps. Break it gently using clean hands or a fork.
  2. Dice the chicken into small, even pieces to ensure quick and even cooking.
  3. Crack the eggs into a bowl, add a pinch of salt, and whisk lightly.
  4. Chop all vegetables and keep them ready near the cooking area, as stir-frying happens quickly.

Step 2: Cook the Chicken

  1. Heat a wok or large pan over medium-high heat.
  2. Add 1 tablespoon of oil and allow it to heat fully.
  3. Add the diced chicken and spread it in a single layer.

Step 3: Scramble the Eggs

  4. Remove the eggs from the pan and keep them with the chicken.

Step 4: Stir-Fry the Aromatics and Vegetables

  1. Add the remaining oil to the pan.
  2. Add chopped garlic, ginger, and the white parts of the spring onions.
  3. Stir-fry for 20–30 seconds until fragrant, being careful not to burn them.
  4. Add carrots, peas, and capsicum.
  5. Cook for 2–3 minutes until the vegetables are tender but still slightly crisp.

Step 5: Fry the Rice

  1. Increase the heat to high.
  2. Add the cooked rice to the pan and spread it evenly.
  3. Let the rice sit undisturbed for 30 seconds to develop slight crispness.
  4. Stir-fry vigorously, breaking any remaining clumps and mixing with the vegetables.

Step 6: Combine Everything

  1. Return the cooked chicken and scrambled eggs to the pan.
  2. Add soy sauce, oyster sauce if using, and pepper.
  3. Toss everything thoroughly so the rice is evenly coated and heated through.
  4. Taste and adjust seasoning with salt if required.
  5. Drizzle sesame oil over the rice and mix gently.

Final Garnish and Serving

  1. Sprinkle the green parts of the spring onions over the fried rice.
  2. Remove from heat and serve immediately while hot.
  3. Serve on its own or with a side of stir-fried vegetables or a light soup.
